Aceite de oliva Extra Virgen Estratto Di Coratina
In the olive groves of Domaine Castelar, under the sun of Progreso – Canelones, the finest fruits ripen to give life to Familia Deicas Olive Oils. Only a few bottles are produced each year, with the highest quality. To produce this Estratto di Coratina, the olives are harvested very early, while the fruit is still green. This aims to maximize the intensity of the flavors.
The extraction process is very careful, done in a small production mill and protected from oxygen to preserve the concentration. It is a much more bitter and peppery oil than regular oils. It is an ultra-concentrated product, an extract, to be used in small amounts. It is especially recommended when you want to add the flavor of a bitter and peppery oil without contributing too much fat content.
